My husband's Blackened Salmon is the Bomb!
We bought the salmon at Costco- one pound is usually good for 2-3 people. Costco sells a slab for $16 that could feed 4-5.
Skin the salmon- remove the bottom layer or if bought at Costco, its done for you!
Rinse the fish with water and slice into 3 inch wide pieces.
Place your burner on Medium heat.
Nothing coating the pan as the oils from the fish keep it moist.
Sprinkle Old Bay Seafood Seasoning (or any seafood/blackening seasoning you find and like) on one side then flip to coat the other. Season to taste, be aware some seasonings are spicy.
Cover the pan with foil to get the fish hot enough to blacken.
Cook 10 minutes each side or as you desire.
Voila!!! Flaky, slightly spicy, blackened Salmon.

My husband is a big fan of blackened fish! I am not a fish eater but I do like Old Bay seasoning on french fries!
